How it works
The gas-mark or thermostat dial on many European ovens is not a temperature but an index: thermostat number ≈ °C ÷ 30. Thermostat 6 is therefore about 180 °C, the classic baking setting, and thermostat 7 about 210 °C. The division by 30 is a convention, not physics, so it gives round numbers rather than exact ones. Thermostat 1 is roughly 30 °C, 4 about 120 °C, 10 about 300 °C — and recipes are written knowing the scale is approximate, which is why a few degrees either way rarely ruins anything. For Fahrenheit, the usual conversion applies: °F = °C × 9/5 + 32. Useful landmarks for cooking: 180 °C = 350 °F, 200 °C = 400 °F, 220 °C = 425 °F. These three cover most recipes you will meet.
